Fudge Factory Farm Five-Minute Fudge
My mother always would tell me the story of when she was three years old and she got to help her mother make fudge. She was so excited because number one she would soon be getting some candy and being the youngest of three children spending time with just her and mom was extra special. Water was boiling, chocolate was melting, and it was time to use the beaters to mix everything together. My mother was so excited to be able to help. My Grandmother carefully poured the melted chocolate into the bowl and started to mix all the ingredients together with the beaters… Right as my mother with her beautiful long flowing hair peeked her face into the bowl to watch all the ingredients come together into fudge and then the beaters found her beautiful long flowing hair and proceeded to wind up her hair into the beaters. Don’t worry because my Grandmother was quick and able to turn off the beaters, unwind my mother’s hair and no one was injured in the making of the fudge. Yes, she still was able to finish the fudge, but when the rest of the family found out what had happened no one would eat the fudge. My Grandmothers famous words still echo in my head every time we are making fudge at the shop, “Jean, I always knew you would do great things with fudge someday.” Because of the beater mishap my Grandmother came up with a simple scaled down version of her fresh fudge recipe with only thee ingredients, takes only about 5 minutes, and no beaters needed.
- Parchment paper
- 8-inch square pan
- Non-stick spray
- Wooden spoon
- Double boiler
- 1 pound Chocolate
- 3 tablespoons Butter
- 1 Can Sweetened condensed milk 14 ounce (Regular, low fat or nonfat)
- Line an 8-inch square pan with parchment paper. The paper should overlap the pan by 2 inches on all sides. Wax paper can also be used but should be sprayed with a non-stick spray first.
- Place the chocolate and butter together in a microwave safe bowl. Melt (in microwave) at 30 seconds intervals and stir after each 30 seconds to prevent burning. If you feel hot spots on the bowl reduce the cooking time. This can also be done on the stove-top in a double boiler. When the chocolate mixture is melted, stir in the sweetened condensed milk. Blend with a wooden spoon until the mixture is a uniform consistency. Pour mixture into the prepared pan.
- Place the pan in the refrigerator until set. When the fudge is firm, grab the edges of the paper and remove the fudge from the pan by lifting out the paper. Cut the fudge into squares. Store them in layers, separated by paper, in an airtight container in the refrigerator for up to 2 weeks.
Variations Walnut Fudge – Stir in 1 cup coarsely chopped walnuts when you incorporate the sweetened condensed milk. Milk Chocolate Fudge, Dark Chocolate Fudge, White Chocolate Fudge- use one pound of any of these to make a different flavor. Chocolate chips can also be used. Rocky Road Fudge- Add ¾ cup miniature marshmallows and ¾ cup nuts of your choice after stirring in the sweetened condensed milk. Be creative the only limit is your imagination.
